The touch of Islamic culture in Indian food
For a considerably long period, India has remained under the foreign domination including the Islams, the Mughals, and finally the Englishmen. Every one of them has put some impact on the food practices and food habits of the people in this country. Indian Cuisine has traversed a long way since the Vedic ages and has taken into its fold various recipes from the Islamic and Mughal kitchen.
One of the now famous India Recipes is the Hyderabadi biriyani. It is one of the famous meat-and-rice dishes of Hyderabad, the capital city of Andhra Pradesh. It is a traditional meal for celebration made using goat meat and rice. The Hyderabadi biriyani we see and taste to day is a mixture of Mughlai and Telengana cuisines. Once upon a time it used to be the pride of the kitchen of the Nizam, the ruler of Hyderabad.
Unlike the traditional South Indian Recipes that are mostly vegetarian in nature, Hyderabadi biriyani has meat mingled with curd, onions, spices, lemon, and saffron. Coriander and friend onions are used for garnishing. The meat is usually mutton though some times chicken biriyani are also prepared.
All these ingredients are finally mixed and cooked with a best quality Indian Rice called the Basmati rice which itself is one of the best quality food article. The biriyani thus prepared is served with sour curd or chutnee to the guests or diners.
